Frontier Flapjacks

Hello Friends! I'm excited to share another pancake recipe with you. Unlike my usual recipes, this one relies on a box mix called Kodiak Cakes Frontier Flapjack and Waffle Mix Non GMO Whole Wheat, Oat & Honey. The company writes that flapjacks were the hearty mainstay of frontiersmen from the Yukon to the High Sierra. These mountain men and homesteaders relied on a traditional flapjack that combined the rich, substantial taste of whole wheat with the mellow taste of whole grain oats. The flapjack has protein, fiber and very little fat. Kodiak Cakes have been featured in Weight Watchers, Vegetarian Times, Martha Stewart Living and a bunch of other publications. The ingredients on the box are all natural. (I'm not being paid to write this review. I stumbled upon this product while looking for a good, whole grain pancake mix).

What I love about these flapjacks is that they're easy and quick to prepare. You just add water to the mix and the batter is pan-ready. They taste great too! This box mix is ideal for camping trips, summer vacations and holiday brunch crowds. There's the benefit of whole-grain nutrition too.

Having prepared these flapjacks according to the package directions, I think the texture is greatly improved by adding a large egg to the batter. I also stir in some ground flaxseed and vanilla. Flaxseed contains omega-3's, bumping up the nutritional profile of this recipe even more.

These flapjacks aren't dry. They're light, fluffy and tasty. I often pair them with real maple syrup, sliced bananas and fresh berries. You don't need too much syrup because the pancakes are a little sweet from the honey in the mix.

These flapjacks keep me full and satisfied. My husband loves them too. If you're looking for a boxed whole grain pancake mix that doesn't have an assertive-wheat-taste or the texture of sawdust, this is a wonderful brand to try. I haven't made waffles with this mix. Somehow I don't see waffles working out well. But the flapjacks are very good. They're in regular rotation around here now.

Some Notes:

You can add less water to make thicker pancakes.

You can get creative with this recipe by adding your favorite flavors and ingredients to the batter. Blueberries, sliced bananas, diced walnuts, vanilla powder, cinnamon or nutmeg are all good choices.


  • 1 cup of Original Kodiak Cakes Frontier Flapjack & Waffle Mix Whole Wheat, Oat & Honey
  • 1 cup of water
  • 1 large egg
  • 1 tablespoon of milled or ground flax seed (optional) 
  • 1 teaspoon of real vanilla extract  

Serving Suggestions: 
real maple syrup
sliced bananas


Mix the water, vanilla and egg in a bowl. Add the flapjack mix and milled flax seed. Stir until combined. Try not to over mix. It's fine if some lumps remain in the batter. Pour by 1/4 cups of the batter per flapjack on a preheated, lightly oiled griddle or pan. Cook the flapjacks on medium heat. Flip the flapjacks after bubbles form and the bottom-side is golden brown. Cook the opposite side until it's golden brown. Serve with any of the above suggestions.
