Thai Turkey Meatloaf with Sriracha & Lime





Lately, I've been making turkey meatloaf at least once a week. I add a bit of bacon to the mix to keep it moist and bump up the flavor. This Thai inspired recipe is always a hit. It's mildly spicy. Scallions, basil and lime lend fresh notes. Thai curry paste keeps things on the exotic side.





It's juicy and ready in under an hour. Just mix everything in a bowl and bake in the oven for about 40-45 minutes. I love to serve the meatloaf with sriracha sauce and fresh lime wedges. It goes great with baked potatoes and steamed broccoli, peas or bok choy.



Thai Turkey Meatloaf Recipe

Serves 4-6 

Some Notes:

Run your knife over the scallions and basil a few times to finely dice them. I use a microplane zester to grate the garlic and ginger. I use kitchen shears to cut the bacon into small pieces.

Maesri is my favorite brand of Thai curry paste. It's well rounded and flavorful with no bitter aftertaste.  Made in Thailand, Maesri comes in small cans for convenience. 

Ingredients


  • 4 scallions, finely diced
  • 1-2 limes
  • A generous handful of Thai or regular basil, finely chopped  
  • 1 garlic clove, minced
  • 1 inch piece of ginger, peeled and minced
  • 3 pieces of bacon, finely chopped
  • 2 pounds of ground turkey or ground chicken
  • 2 large eggs
  • 2/3 of plain bread crumbs
  • 4 tablespoons of full fat coconut milk
  • 1 tablespoon of red or green Thai curry paste. I use Maesri Brand. 
  • 1 tablespoon of honey plus more for drizzling 
  • Salt to taste
  • Coconut or regular oil for cooking
  • To Serve: lime wedges, sriracha sauce 

Instructions


Preheat the oven to 375. Line a baking pan with foil and spray with nonstick cooking spray or smear with some oil to prevent sticking. I use coconut oil.

In a large bowl, mix all the ingredients (from the scallions to the salt) together to combine. Form the mixture into a rectangular shape about 12 inches long by 4 inches wide. Bake the meatloaf in the oven for 30 minutes. Take it out of the oven and drizzle more honey over the top. Put the meatloaf back in the oven and bake for another 10-15 minutes or until the center is cooked through. Avoid overcooking. Serve with lime wedges and sriracha sauce.
