After my husband and I moved from Philadelphia to Boston, I started working at a crisis center. I was oriented by a bright and pretty art therapist. Kind and sincere, she eased my fears. She made me feel welcome. We talked about cooking and traveling which was a welcome diversion from the intense work.

Blueberry Buckwheat Pancakes
While browsing my favorite used book store in a little town just outside Boston, I picked up Vegetarian Planet at a bargain price. I would have paid more for this cookbook just for this one recipe. After my first bite of buckwheat pancakes, I said a silent thank you to the author for creating such a beautiful recipe.
These pancakes are high in protein from the addition of Greek yogurt that’s mixed into the batter. The yogurt also makes them incredibly moist which is needed in whole grain pancakes. High in fiber, key flavonoids, anti-oxidants as well as very light and airy, buckwheat pancakes surprised me with their appealing texture and taste.

Incredibly Moist Blueberry Muffins
These are my favorite blueberry muffins, a tried and true American classic recipe. Warm from the oven, they remind me of lazy summer mornings. They're full of blueberries and incredibly moist, with crunchy-cinnamon-sugar-tops. I make them with my vanilla sugar, but regular white sugar is fine too. You can use raspberries instead of blueberries if that’s what you prefer. The recipe is easy to whip up and versatile. Give them a go! I know you’ll love them too!
