Moroccan Vegetarian Stew



Hello friends! How are you? I'm sharing another Moroccan stew with you. This recipe is one of my favorites.  

I love making Moroccan stews in winter. My husband and I live two miles from the Atlantic Ocean, on the North Shore of Boston. When the cold wind whips the salty sea air, this stew makes us feel cozy. If a blizzard is in full effect I play some Van Morrison, putter in my kitchen, enjoying the snow-globe-view from my window and the warm aromas from the simmering stew. Vegetarian stews comfort us with their wholesome and healthy nutrition.

Beef Stew with Wine & Root Vegetables

Perfect for cozy Sunday suppers with family and friends, this stew can also be made the day before you’re going to serve it, giving you more time to relax. It’s a classic beef stew that will leave you with a content feeling and a smile on your face. After a long workweek, a good stew is a soul-satisfying meal. Serve it with some fluffy mashed potatoes or buttered egg noodles. Comfort in a bowl. This one has a mellow sweetness from the root vegetables and a fresh finish from the parsley and thyme. The sauce is deeply favored and glossy. The beef is tender. There are plenty of healthy vegetables in it. It’s a keeper in my home.

Moroccan Vegetable Tagine



When wintertime drags on and on and the sun seems like a distant memory, I start cooking colorful foods. Moroccan cuisine has always lifted my spirits with its tangerine-tinted-tagines. Visions of amber, North African sunsets come to mind. My cabin-fever-blues are chased away.

Adapt it to your favorite vegetables like butternut squash and/or regular potatoes. Get creative and make it your own.

Moroccan Eggplant Tagine


Lately, I've been doing more cooking than stitching. Moroccan cuisine is making its way into my kitchen regularly too. 

This warmly spiced stew is what's for dinner tonight. Eggplant is the star here. If you love eggplant then this recipe is for you. I'm half Middle Eastern, which makes me a genetically programmed eggplant lover.

Moroccan Chickpea Tagine


Moroccan tagines are beautifully fragrant stews made with key spices and whispers of saffron. I make a lot of tagines, like this Eggplant Tagine. To my delight, a French woman once wrote to me to say that my tagine recipes are some of the best she's ever tried. The French make a lot of tagines.
