Lemony Lentil Soup



Lentil soup is what's for lunch today. I make this soup often. It's rustic and easy to prepare. The nutritional profile is wonderful. Best of all, the lentils remain whole and keep their firm texture. This is a brothy lentil soup. A smoked-paprika scented stock is infused with the earthy flavor of the lentils. The soup is finished with lemon and dill. Fresh dill is one of my favorite herbs. The bright and citrusy flavor of dill counters the richness of the lentils. Spinach is stirred in at the end of cooking to remain vibrant and green. Lots of freshly cracked black pepper is welcome here too.

French Vegetable Barley Soup


I love soup. I make this French vegetable soup almost every week in autumn. It's great with a crusty baguette or a simple sandwich. Brothy bowls of vegetable soup come to the rescue when I'm in need of something healthy and comforting. Soup-making is a gentle domestic activity that satisfies my soul. This recipe is very easy to prepare. Chop and drop cooking is all that's required.

Lebanese Lentil Soup With Toasted Orzo


This easy, creamy lentil soup is always on my menu. It's economical. It reheats well. It's good. My favorite Lebanese spices like cozy cinnamon and a dash of allspice show up here. As the soup simmers, warm aromas take me waaaay back to my beloved grandmother's kitchen. I often serve the soup with pita bread, rice or toasted orzo. Diced scallions, herbs and lots of fresh lemon juice make it sing. It's a light but nourishing soup that's welcome in both warm and cold weather. It's healthy too.

Moroccan Sweet Potato Bisque




Vibrant, soul-satisfying sweet potato soups are a favorite of mine. This one has the luscious texture of a bisque, but none of the cream. You're free to add some heavy cream or coconut cream if you'd like. But you won't miss it. I promise. I adore this soup! I hope you'll give it a go.

Two common spices, cinnamon and cumin, infuse this recipe with Moroccan flavors. Fresh ginger brings a bit of heat. It's relatively easy to prepare too. Everything is chopped and dropped into a pot to simmer. The soup can even be made ahead of time.

Thai Red Curry Noodles



I've hit a roadblock with embroidery designing. My last larger pattern was Madame Butterfly. Since then, I've done some small freebies, which people enjoy. But the bigger ideas aren't coming to me. When that happens, I put my needle and thread away and head to the kitchen. Recipe ideas flow without any effort. They continuously pop into my head, before I go to sleep, on long walks with my beagle, while brushing my teeth. I write them down because I can't keep up. I cook up a storm. That's my process. It's a bit insane with lots of messes in the kitchen. But I am not one without the other. My cooking and sewing fuel each other.

Thai Garden Vegetable Soup




Today we care so much about what we eat. Yet we have less time to prepare nutritious food. My favorite midday meal is soup. I make a lot of quick ones. This rainbow-colored recipe is ready in about 30 minutes. A bit of chopping and dropping into a pot is all that's required. It's a fun, healthy, Thai-take on garden vegetable soup. I like it much better than the old standard. Spiked with chili, lime and creamy coconut milk, it makes a light and lively lunch paired with crusty rolls or crackers. With an abundance of vegetables, pops of  sweet peas and fresh scallions, this non-traditional veggie soup is a good choice for springtime. Double Mushroom Soba Noodle Soup



Today, I needed a major break after a pattern I was about to publish had a mistake in it. Oh well, stuff happens, right? Cooking always soothes my soul. A big bowl of Asian noodles offered me the best kind of kitchen-comfort. After being nourished by this slurp-worthy soup, I took a long stroll with my eager beagle and switched-stitching-gears. I decided to finish working on a cheerful monogram. It's springtime colors are inspired by Cath Kidston fabrics (see below for photo).

Old-Fashioned Chicken Noodle Soup


Most days you can find me hand-embroidering and cooking. I enjoy quiet, domestic activities that are blissfully non-competitive, solitary and stress-free. I also work part-time in a crisis center, which provides a nice balance. Soup is one of my favorite things to cook. I like knowing it's simmering on my stove. A big brothy bowl, along with a piece of crusty bread, is simple and delicious. There are usually tasty leftovers too.

Everyone loves Grandma's chicken soup, right? My grandmother was a wonderful cook. She could mend a sock or make a Christening dress without much effort too. I adored spending time with her. She used to make the best chicken soup. She finished it with a pinch of cinnamon and a squeeze of lemon. The addition of cinnamon wasn't overpowering. Instead, the soup tasted even more warm and inviting.

Thai Cauliflower Curry



I love to cook Thai food. This vegetarian curry has bright flavors and a creamy, light texture. Potatoes give it substance. Cauliflower pairs well with coconut milk. Tangy lime and warm ginger..it's all here!

This cauliflower curry gives you energy and contentment. My husband loves it. Full of omegas, vitamins, antioxidants, fiber and other good things, you'll be happy you prepared this nutritious, 30-minute meal. Just chop and drop the ingredients into the pot, simmer and serve. Minimal effort, big reward. Jasmine rice, chapati or roti is nice with it too.

Nothing says comfort to me more than soup. I come close to slurping it 365 days a year. This luscious sweet potato soup is a gift to yourself or people you love. It's rich and velvety like a bisque. Vietnamese Vegetable Soup with Coconut Rice


By now, you know how much I adore soup. My Vietnamese vegetable soup is a quick take on traditional slow simmering pho ga. Chicken is added for protein. Tofu or shrimp work well too. Here, a light and flavorful broth is loaded with lots of tender-crisp Asian vegetables, spicy ginger and a finish of fresh lime. Soft hints of warm spices lend an authentic taste to the soup. Earthy mushrooms and soy sauce give it an umami flavor. 

This glorious soup leaves me feeling restored and content, especially during cold and flu season. It's a deliciously nutritious meal. It's ready in under 30 minutes and you control the sodium level. As the rice cooks and the soup simmers, the kitchen fills with sunny aromas. Soba Noodle Soup with Mushrooms & Snow Peas


I love soup! There are many simple soup recipes on this blog. But, I especially adore Asian noodle soups like my Thai Noodle Soup or my Rice Noodle Soup with Bok Choy. The Recipe Index lists all of them. Do you dream about big brothy bowls of noodle soup too? When I go to downtown Boston, I head straight for Chinatown to get my fix. Since I live a good few miles from there, I've learned to create them at home.

I work with a beautiful nurse who's my best friend. She's everything a friend and a nurse should be; kind, respectful and insightful. She looks 20 years younger than her actual age. Her fountain of youth springs from her youthful soul. This soup may also have something to do with it. She calls it her "Chinese Woman Soup." A wise Chinese lady told my friend that the soup keeps her healthy. I riffed on her recipe.

Reboot Soup



After all the holiday feasting, we're in need of something fresh, green and clean. Cue my reboot soup. This soup tastes like you made your own vegetable stock. But it comes together in less than 30 minutes, thanks to my go-to secret ingredient. It rescues us with a delicious balance of flavors and textures. Crisp peapods are tossed in at the last minute, remaining springtime green. Chewy elbow pasta and creamy white beans provide substance. Corn and peas lend their subtle sweetness. You know you're eating something good for you, but it doesn't feel like you've jumped on the diet wagon. It's pretty to look at too. The soup is customizable with your favorite veggies. Toss in a few chopped mushrooms if you're in the mood. It would be great with asparagus in springtime. A little grated Parmesan or gruyere cheese is a nice finishing touch. 




This weekend, my husband and I drove to a lonely Cape Ann beach with our beagle, Ellie. It was surprisingly mild and we walked and enjoyed the sunshine. The long walk and this fresh soup for lunch was just the thing.

Thai Noodle Soup




Is there anything better than a big bowl of Asian noodles? It's up there on my list of favorites, along with chocolate, mashed potatoes and fresh baguette. When I was working as a young social worker in Philadelphia, I had lunch every single day at a no-frills Vietnamese noodle soup (Pho) house. They only served soup and they did it right. I slurped soup there so much that the wait staff insisted that I learn to use chopsticks properly. I love the contrasting textures and flavors of these kinds of soups: tangly noodles, crunchy bean sprouts, tender-crisp veggies and flavorful broth.

Thai Red Lentil Soup with Coconut Milk


Coming home to a bowl of lentil soup is cozy. Here, the humble red lentil is elevated to new heights. Made with coconut milk, the soup has a creamy texture and a healthy dose of omega 3′s. The flavors of ginger and chili work beautifully with the mellow lentils, perking them up. Thai basil and lime are fresh finishing touches.

Being Middle Eastern, I’ve eaten my share of lentil soups. This time, I ventured out of the box, wanting something a little different...something smooth and luxurious with a more lively flavor.

Thai Sweet Potato Bisque with Coconut Milk


This special soup is suitable for holiday entertaining. It's a great choice for a first course on a Thanksgiving menu. It can be made a day or two before the meal. It's my husband’s favorite soup! He starts requesting this as soon as fall arrives. It also receives rave reviews from my trusty taste testers at the hospital where I work.




This bisque is a healthy recipe makeover and slight departure from the more traditional French ones made with heavy cream. But, you'd never know it by the taste and texture. Creamy coconut milk mellows the assertive flavors of chili and ginger. The heat wakes up the palate in a controlled, pleasurable way. Thai basil and fresh lime juice finish things off with pep. 






Thai Sweet Potato Bisque Recipe  

Serves 6

Some Notes
Vietnamese Cinnamon is the strongest, richest and sweetest cinnamon on the  planet. I love it in this soup. Regular cinnamon is just fine too.
Rapunzel No Salt Vegetable Bouillon Cubes are my go-to choice for all my vegetable soups. This bouillon creates a broth that has a pure clean, fresh taste. I buy it by the case from amazon. You can also find it select Whole Foods supermarkets.  But you can omit it and the water and replace them with 6 cups of your favorite stock or broth..  
A roasted red pepper grounds all the flavors and counters the sweetness of the potatoes. You could leave it out if you don’t feel like doing an extra step. But it’s worth it to include it because it’ll give the soup another layer of flavor.

Ingredients
  • 3 large sweet potatoes, peeled and chopped. (They should weigh about one pound each totaling 3-3 1/2 pounds)
  • 1 roasted red pepper, halved and seeded (optional)
  • 1 large onion, chopped
  • 1 tiny red or green Thai pepper or a jalapeno pepper, diced. You can remove the seeds and veins of the pepper to control the heat.
  • 2 limes
  • 1 inch piece of fresh ginger peeled and grated 
  • 6 vegetable bouillon cubes. I use Rapunzel No Salt Vegetable Bouillon.
  • 1/2 teaspoon of ground cinnamon plus more for sprinkling 
  • 1/2 can of coconut milk
  • Salt to taste
  • Oil for cooking  
  • To Serve: Thai basil or regular basil, cilantro, lime wedges, lime zest, ground cinnamon, flaky sea, toasted pepitas (pumpkin seeds), crusty bread

Instructions

To roast the pepper: Place the sliced pepper, cut side down, on an oven safe baking sheet lined with tinfoil and broil on high until the skins are charred and blackened. Remove from the oven, place the pepper in a covered bowl or wrap in tin foil to steam. Once cool enough to handle, peel the skin and discard. Chop and set aside.
In a large pot saute the onion and chili in some neutral tasting oil with a pinch of salt. Once the onion has softened, add the chopped sweet potatoes, roasted red pepper, grated ginger, 6 cups of water, 6 vegetable bouillon cubes and the cinnamon. Adjust the salt. Cover, bring to a boil, reduce heat and simmer until the sweet potatoes have softened. Puree with an immersion blender or in a food processor. Stir in the coconut milk. Start with just a half a can and add more to your liking. Don't shake the can. Take the coconut cream that is usually at the top of the can. Finish the soup with a good dash of cinnamon, a little lime zest, lime juice and basil. Toasted pumpkin seeds are also nice sprinkled on top. Enjoy!
